Peaberry (PB) is a natural mutation where the cherry produces a single round bean instead of two flat faces. Because the entire cherry's sugars feed one seed, PB cups with unusual intensity and sweetness. It is rare , about 5% of a Bugisu harvest , and roasters buy it for micro-lots and limited releases.
